Cucumber Avocado rolls has to be the most easiest and the most delicious appetizer / snack. There is no cooking and it just needs cucumber and avocado predominantly.
I have used little chopped olives and some toasted sesame seeds for crunch but these are absolutely optional and can totally be skipped or swapped to anything else.
Summer is around the corner but in our part of the country, spring month is already feeling like peak summer. The temperatures are soaring and are well into 90's. These are the kind of days when I do not want to turn on the stove or oven.
This Vegan cucumber rolls are just perfect for the summer months as there is no cooking. All we need to do is peel the cucumbers, layer with mashed avocado (or use guacamole for more spiced up flavor), add the garnishes and roll on.
The rolls stay put as is with just the stickiness from the mashed avocados. To make them look fancier, we can insert a toothpick through the rolls. This also makes it easier to pick and eat.

Ingredients and substitutes

Cucumber - I have used the regular cucumber to make the cucumber rolls. We could use English cucumber as a substitute. The min cucumbers also will work to make mini bite size rolls.
Avocado - Use well ripe avocados to make the filling for the cucumber rolls. I have used guacamole for instead and that spices up the roll without having the need to add any extra spices.
Olives - I have used Kalamata olives, chopped into tiny pieces to layer inside the cucumber roll. This is purely optional and if you are not a fan of olives, skip it.
Toasted sesame seeds - These seeds add a little crunch to the cucumber avocado rolls and also taste great.
Red chili powder - This is also optional if you like spicy rolls like we do. I have used the red chili powder sparingly as I used spicy guacamole to layer my cucumbers.
Step by step process
Prep the avocados
- If using fresh avocados, remove it from the skin and mash it well. Add salt, lime juice, and seasoning as preferred and keep it aside. I used guacamole as my filling and it had all the necessary spices it needed.
Prep the cucumbers
- Wash and peel the cucumber only in one quarter. Now using a mandolin or a wide peeler, slice thin long layers of the cucumber. Going towards the center if the cucumber has too many seeds, skip those layers and use the ones without many seeds.
- The cucumber I used for pretty much seedless and I was able to use the whole cucumber.
- Place the sliced cucumbers on a paper towel-lined tray to absorb the extra moisture.
Layer the cucumber slices
- Place one slice of cucumber on a prep board or cutting board and spoon a layer of mashed avocado or guacamole. Make sure to go to the edges to allow the cucumber rolls to seal well.
- Sprinkle the chopped olives evenly over the avocado layer.
- Then sprinkle the toasted sesame seeds.
- Sprinkle red chili powder, if using.
Roll the cucumber rolls
- Starting with one edge, slowly start rolling the cucumber slice. Roll them tight enough to hold but not too tight to squeeze the filling out.
- Go to the edge and make sure the cucumber slice seals well.
- The cucumber rolls seal pretty well with the stickiness of the avocado inside but if needed the rolls can be secured with a toothpick.
How to serve the cucumber avocado rolls?
The cucumber rolls are a great evening snack or a quick appetizer with any kind of meal. I like to chill it briefly before serving but cannot let it sit for too long as the cucumber starts to sweat and let out moisture.
I love to make these on late afternoons in summer to sit out on the patio and enjoy with a nice glass of iced tea or iced coffee.
These cucumber avocado rolls can also be served as a fresh side with a meal. I love serving fresh cucumber rolls with sandwiches and one of my favorites is this pimento cheese sandwich. I like to make this instead of a salad and my boys love it and finish it in no time.
Expert tips
- Seedless cucumbers are the best for these rolls. If there are seeds in the cucumber, make sure to not use the center part.
- Spice up the avocado as you like or use guacamole like I did for more flavor.
- Use any add-on topping in the cucumber avocado rolls. I have used feta cheese instead of olives in the past.
- Sesame seeds add a nice crunch to the cucumber rolls.
- The cucumber avocado rolls do not store well. Use them within a few minutes of making them.
Frequently asked questions
Use cucumbers that do not have seeds. English cucumbers work great. I have used regular cucumbers and made sure to choose tender ones. If there are seeds, discard the center layer and use the rest.
I have used hummus to make cucumber rolls. You could also fill it up with thinly sliced vegetables and make it a vegetable-stuffed cucumber roll.
Cucumber avocado rolls do not store well. They need to be eaten right after they are made. I would have all the ingredients ready to be assembled and make the rolls just before serving.
